Lindera Farms, one of America's finest craft fermenters, teamed up with chef José Andrés to create a Sangría Drinking Vinegar and a Gazpacho Seasoning Vinegar, each built around slow-fermented, probiotic-rich brews and seasoned with Burlap & Barrel spices. The result is a pair of vinegars that taste like José's Spanish heritage filtered through Lindera's forage-forward approach to fermentation.
The Sangría Drinking Vinegar is seductive and fruit-forward, fermented with native American grapes, heirloom apples, hibiscus, quince, and foraged magnolias, juniper, and spicebush, with bay leaf, cinnamon, black lime, and black peppercorns woven throughout. Mix with Cava or a juicy Spanish red for instant sangría, or shake with sparkling water for a non-alcoholic tinto de verano.
The Gazpacho Vinegar is bright, peppery, and refreshing — made with cosmetically challenged tomatoes, peppers, and cucumbers that would otherwise go to waste, plus chef José Andrés' own Arbequina olive oil, purple dulse seaweed, and a touch of sherry vinegar. Use it to dress salads, brighten grilled meats and fish, or as a dipping sauce for raw vegetables.
